Pumpkin seed cookies

ingredients:

2 eggs
1 table spoon of hot water
110 g sugar
1 vanilla sugar
90 g spelt flour
½ tea spoon baking soda
30 g fine ground pumpkin seeds
20 g fine ground pistachios
10 g fine ground pumpkin almonds

To garnish: 40 g pumpkin seeds

preparation:

Whisk eggs with water, sugar and vanilla sugar until creamy. Mix flour and baking soda and fold in. Mix the pistachios with the almonds and mix them in the cream.
Put tea spoon sized heaps on a baking tray covered with baking paper and garnish them with pumpkin seeds. Shift the baking tray in the lower part of the oven and bake the cookies in the preheated oven at 180°C for approx. 15 minutes.
