Name:
In Austria most people call this pink - violet sprinkled bean “Käferbohne“, which literally translated means “beetle bean“. In other countries though, this speciality is known as Scarlet Runner Bean.
Origin:
In the 16th century this very special bean made its way from the “New World” into the Austrian region Styria. In the meantime the Scarlet Runner Bean has become a regional speciality not only because the climate of the hills in Eastern Styria offer the perfect conditions for it to grow.
Production:
The Scarlet Runner Bean got more and more important for our region and so farmers decided to produce this very special bean not only in private gardens but to start agricultural production. Nowadays the beans are cultivated in form of high quality hedge cultures or in form of more cost-efficient intercropping with corn, which stilts the beans.
Nutritive value:
Scarlet Runner Beans contain a series of precious ingredients such as calcium, potassium, phosphor, vitamin C, B-vitamins, protease-inhibitors, saponine and phytoestrogen. The phytochemicals act anti-inflammatory, cholesterol-lowering and cancer-preventive. Very special is also the high protein content: 100 gram dried beans contain approx. 43 gram of carbohydrates and 20 gram of protein at only 1,7 gram fat. You can see that Scarlet Runner Beans are an adequate substitute of meat, not only for vegetarians. Moreover the high content of fibres supports digestion and helps to regulate the level of blood sugar and cholesterol. Scarlet Runner Beans strengthen also nerves and bones.
Hints for preparing Scarlet Runner Beans:
Scarlet Runner Beans cannot be eaten raw therefore they need to be cooked. Before cooking they need though to be soaked in cold water for 12 hours. Then they get cooked for about 2 hours (attention: beans which are harvested in autumn need to be cooked only for approx. 30 minutes).
If you use Scarlet Runner Beans as a salad add some salt to the water, if you want to use the beans for sweets add some sugar to the water.
